The Freckled Fox

The Freckled Fox is a blog made by Emily Meyers. Emily and Martin are parents to five small children. When she was pregnant with the last child, Martin was diagnosed with stage 4 melanoma. For the past year, they have fought hard and kept positive; but this past Wednesday Martin passed through this life and into Eternity.

I don’t know Martin or Emily or even any of their families; but my heart breaks for each and every one of them. Please, keep Emily and those babies in your thoughts and prayers.

 

“Magic”Cookie Recipe

My family really likes cookies. Pretty much any cookie will make them happy. I made these cookies a few years ago and brought them to the pool. One of my daughter’s friends tasted them and declared they were “magic”. Why? Because they just made her instantly happy she said. Hey, it doesn’t get much better than that.

When we were all teaching in VBS a few weeks ago, she asked when I was making some more of those “magic” cookies. The next day I brought her a batch. Her eyes literally filled with happy tears.

I don’t know if anyone else will enjoy them as much as our dear friend does, but here’s the recipe to bring a little “magic” into your day!

Loved in the South’s Magic Cookies

2 cups almond flour

1 cup Splenda

1/2 cup Torani sugar-free brown sugar cinnamon syrup

1 tsp. baking soda

1 tsp. salt

1/2 cup lower sugar cranberries

1 1/2 to 2 tsp.  orange extract (depending on how orangey you want it)

1/2 cup white chocolate chips

1 stick  softened butter (the best butter is Kerrygold)

Mix the softened butter, Splenda, syrup, and almond flour together. Add the rest of the ingredients. Drop into small balls on a parchment paper lined cookie sheet. Bake in a preheated oven at 350 degrees until edges turn light brown. I baked them 8-10 minutes. Enjoy!

 

Agenda

You know the scene in the movie, “You’ve Got Mail,” where Meg Ryan says she loves a bouquet of freshly sharpened pencils. I feel that exact same way! I love school supplies. I love new pencils. I love stickers. I love folders. I love agendas. I also love Lilly Pulitzer. So, you can imagine how happy I was when I got the email that said the new Lilly agendas were ready to be pre-ordered. I ordered mine right there and then.

It hasn’t arrived yet, but I can hardly wait to get it!

Love will win

I’ve waited to post on the Orlando situation until more information had come to light. It seems like it was just another act of hate. How someone could hate another person or group of people that much just boggles my mind. I cannot fathom it!

What brings me hope in all this, is there are SO MANY people who are joining together to do something good, whether it’s giving blood or praying, people want good to prevail! In order for that to happen  we have to start truly caring for each other. We have to look for the good in others. We have to stand up for each other. We have to love one another!

Let us love one another and proclaim that love will always conquer evil!!

“Fried” Squash

 

One of my favorite foods is fried squash. I always looked forward to the days at school when fried squash was a side item. One of our friends who has a farm brought us some squash that he’d grown. Since we stay away from regular flour, I decided to make these with almond flour and bake them.

Oven Fried Squash

3 medium squash, cut into circles

1/2 to 3/4 cup almond flour

salt to taste 

Spray the squash with cooking spray, coat with almond flour. Place on cookie sheet and then in an oven that’s been preheated to 425 degrees. Bake, turning them halfway through. I baked them for about 15 minutes.

Banana pudding dip

I had to bring a snack for the volunteer workers at church. It needed to be something that could serve a lot of people. I decided on Banana pudding dip. I like that it’s like a dessert but not quite as decadent.

Loved in the South’s Banana Pudding Dip

2 blocks of cream cheese

2 cans of sweetened condensed milk

1 large container of Cool Whip

6 bananas 

Put all ingredients in a food processor until  smooth except the Cool Whip. Gently fold the Cool Whip into  the banana mixture. Refrigerate. Serve with vanilla wafers.

Where to next?

Since we already went on our beach vacation, I’m looking for a long weekend trip to add to our summer to do list. I would love to go to Atlanta, but there are so many things to do there that I don’t even know where to start! Are there any other cities in the south that y’all might suggest instead. If you have any ideas on what a crew like mine might want to do in Atlanta I would love to hear them!!

Good Eats on Hilton Head Island

Every time we travel we check Trip Advisor, Yelp, and ask around for the best places to eat. Sometimes the reviews are spot on and other times we are left wondering if the owners somehow coerced people to leave the positive reviews.

Here is an honest review of some of the places to find good food on Hilton Head Island.

Alexander’s : The food here was really tasty. I had the stuffed shrimp and I would highly recommend it. Some of the other people in our party had the surf and turf and said it was some of the best they’d ever had.

The Old Oyster Factory: This had some of the most beautiful views of the marshes. The food was all outstanding. Everything that everyone ordered was perfectly prepared and outstanding. This is a place we’d visit again and again.

Coco’s on the Beach: I didn’t eat anything from here, but my children and the rest of the family did. They said the burgers were out of this world. They also loved the mozzarella sticks. The children loved ordering the virgin drinks there too.

Low Country Backyard: I had the best shrimp and grits of my life at this little restaurant. Unfortunately, we’ve only been able to eat there once. There are only a few cooks, very few tables, and no reservations. This helps keep the quality of the food high, which I appreciate. It just makes it extremely hard to get to eat there with a large family.

I hope that if anyone out there is headed there that this little review helps.

Travel Fun Bags

imageMemorial Day weekend is one of the highest travel holidays of the year. If you’re traveling, I hope you do so safely! I also hope that you have a wonderful and memorable time wherever your travels take you. I like to make little fun bags when we go on trips. We will be traveling with two sets of grandparents and my niece and her husband and two sons. I made a bag for each child and then a bag for each couple.

I included the scavenger hunt I made. It had coloring books, colored pencils, cookies, crackers, Lara bars, a journal, mints, chips, personalized cups, candy that I know each person likes, Trivial Pursuit or Life,  hand sanitizer, tissues, gum or mints, my current favorite book, Joan of Arc by Mark Twain, and a little shot of something for the adults to celebrate the arrival.

The kids bags were similar with more junk food, no books from Mark Twain, and no shots of anything.

Snacks for a Road Trip

Before we know it, it will be time to hit the road to head to our vacation. We are traveling with two sets of grandparents and my niece and her husband and two boys. I’ve already mentioned that I make little fun bags for the children; but I also like to make them for the adults too. These are not even all the snacks and little goodies  I bought to put in the bags. I try to get a little something that everybody likes and things that are easy to eat in the car.  The almond Snickers are all for my oldest daughter who is allergic to peanuts. Obviously, LBD won’t have any Jolly Ranchers in his bag. Hopefully, they’ll be something everybody likes in their bag!
