Banana pudding dip

I had to bring a snack for the volunteer workers at church. It needed to be something that could serve a lot of people. I decided on Banana pudding dip. I like that it’s like a dessert but not quite as decadent.

Loved in the South’s Banana Pudding Dip

2 blocks of cream cheese

2 cans of sweetened condensed milk

1 large container of Cool Whip

6 bananas 

Put all ingredients in a food processor until  smooth except the Cool Whip. Gently fold the Cool Whip into  the banana mixture. Refrigerate. Serve with vanilla wafers.

Good Eats on Hilton Head Island

Every time we travel we check Trip Advisor, Yelp, and ask around for the best places to eat. Sometimes the reviews are spot on and other times we are left wondering if the owners somehow coerced people to leave the positive reviews.

Here is an honest review of some of the places to find good food on Hilton Head Island.

Alexander’s : The food here was really tasty. I had the stuffed shrimp and I would highly recommend it. Some of the other people in our party had the surf and turf and said it was some of the best they’d ever had.

The Old Oyster Factory: This had some of the most beautiful views of the marshes. The food was all outstanding. Everything that everyone ordered was perfectly prepared and outstanding. This is a place we’d visit again and again.

Coco’s on the Beach: I didn’t eat anything from here, but my children and the rest of the family did. They said the burgers were out of this world. They also loved the mozzarella sticks. The children loved ordering the virgin drinks there too.

Low Country Backyard: I had the best shrimp and grits of my life at this little restaurant. Unfortunately, we’ve only been able to eat there once. There are only a few cooks, very few tables, and no reservations. This helps keep the quality of the food high, which I appreciate. It just makes it extremely hard to get to eat there with a large family.

I hope that if anyone out there is headed there that this little review helps.

Celebrating Cinco de Mayo

Yesterday, we celebrated Cinco de Mayo with  a very simple dinner and some homeschool lessons pertaining to the day.

I got the worksheets from The Mailbox where I have a subscription, but they do have some worksheets for free.

I made Margarita Chicken Dip, Frozen Margarita Pie, and Pina Colada Floats.

I got the Margarita Chicken Dip recipe from a pin on Pinterest.

The Frozen Margarita pie was super fast and easy to make. I tweaked a recipe I found on Pinterest to make it more to my family’s taste.

Frozen Margarita Pie

one graham cracker pie crust

one can sweetened condensed milk

one container frozen margarita mix

one tablespoon of lime juice and lime zest

one small container of Cool Whip

Mix together the condensed milk, margarita mix, lime juice and zest. Then fold in the Cool Whip. Pour it all into the crust. Place in the freezer until you’re ready to eat it.

The pina colada floats were just made with pina colada sherbet and Sprite.

Enchilada Soup

I love a good thick soup. If you’ve ever seen my other recipes then you know I like spicy too. This soup is thick and spicy and I love it! It is one of the easiest soups to make, so without further ado, here’s the recipe.

Loved in the South’s Easy Chicken Enchilada Soup

  • 3 packets of taco seasoning
  • 1 to 2 small jars of diced jalapenos
  • 3 large cans of green enchilada sauce
  • 3 lbs. of  cooked chicken breasts
  • 2 containers of jalapeno cream cheese

I place all of the chicken in my crockpot with one taco seasoning packet and cook it on low for 6 hours. When the chicken is done, I shred the meat. I take out most of the liquid that is in the crockpot. I then put in all my other ingredients and stir. I cook it on low for as long as I need or until it is heated through. If I’m using my Dutch oven (like in the picture), then I will put it it in the oven at 180 degrees for a few hours. Yum!

 

Celebrating Earth Day

The kiddos woke up to an Earth Day breakfast. I thought that Earth pancakes sounded so cute. image

They were not the hit I’d hoped they would be. Only one of my children would even try them. Good thing I knew that was going to be the most probable outcome and made the rest of the batch normal.

Later, we read The Lorax by Dr. Seuss and the two little girls did a couple of worksheets pertaining to the book.

After some school work, we made seed paper out of old catalogs. We tore paper into about 2 to 3 inch pieces and put them into a blender filled about halfway with water. After blending, we took the pulp outside and used an old screen to press out the excess water and mold them into shapes. Then we added marigold and hollyhock seeds. We plan on giving these away once they dry.

We even had a Lorax themed dinner and an “earthy” dessert.

I got the coloring sheet printable from Dawn Nicole Designs. Olivia loves to color and after we read The Lorax, she was so excited to color and frame her work.

I made bow tie pasta (the Lorax’s mustache) with broccoli (truffala trees) with homemade low carb Alfredo sauce with Keto fried chicken. For dessert, the kids used chocolate pudding, smashed Oreos, and gummy worms to make their “earthy” dessert.

Pimento Cheese {Low Carb}

I love a good pimento cheese spread. I’m pretty picky about them though. It can’t have too much mayo. It better not have too many pimentos. It definitely needs a little heat. I decided to try my hand at a homemade version including all of my must haves and excluding all the things I don’t like.

I put a large block of sharp cheddar through the food processor. I added mayo, jalapenos, pimentos, and cayenne pepper. It was DELISH!!! I can barely wait to find more things to slather it on.

Loved in the South’s Spicy Pimento Cheese

1 large block of sharp cheddar cheese (shredded)

1 cup mayonnaise

1/4 to 1/2 tsp. cayenne 

1 small jar of pimentos

1 small can of diced jalapenos.

I drained both the jar and can just a little before adding them. Mix everything together and enjoy!

April Fool’s Day Dinner

My kiddos love a good prank. April Fool’s Day has been one of their favorite days as long as I can remember. We usually try to do at least one thing to make the day memorable. Last year I fooled them into thinking they were eating an undercooked lasagna, when it was actually a yummy dessert. This year, I pulled off a Crazy April Fool’s Day Dinner which was actually breakfast for dinner. It definitely takes some advance preparation and quite a bit of work (at least with as many people as we have in our family) to pull it off, but it is so fun! I’ve done a dinner menu like this before and I feel like breakfast items are a lot easier. I used the basic idea and the menu course printables from Dixie Delights. I made some changes, but the general idea came from her site.

To do this, I gave my family a menu of 16 items with funny names. They also had 4 different menu course sheets. On each sheet they had to put four items that they wanted for that course. Each item has to be picked once so that all items are ultimately chosen. They had to pick for all of their courses before I even started cooking; because I didn’t want to give them any hints with the smells in the kitchen.

I had one more trick up my sleeve. Number 9 was the CAFD Special. It looked like an egg, but was really just whipped cream and an apricot.

I pulled out a few Christmas plates to serve this. I also found some “Welcome to 2000” napkins that had never been opened in my party stash. We used those as the Mini Magic Carpet.

Overall, we had lots of laughs. April Fool’s Day is just another good excuse to have a little fun together.

Happy St. Patrick’s Day

I took this picture in March 2012.

I have always loved looking for four leaf clovers. I used to spend a good deal of my recess time searching out these little treasures. I still look on my way to and from the mailbox.

Today, we will go out and collect some clovers for decoration and wear our green clothes to celebrate. I made a St. Patrick themed breakfast with green eggs and green decorations. I have a green themed dinner planned. I looked for an Irish recipe; but since my husband and I don’t really eat potatoes or bread, I found it too difficult to find something Irish we all would eat.  I am making green enchiladas for dinner instead. I’m also making rainbow cookies out of Funfetti cake mix.

To make Super Duper Easy Funfetti cookies:

One box of Funfetti cake mix

One egg

2 sticks of butter

Soften the butter, add egg and cake mix. If you want the cookies a little more festive, add more colorful sprinkles. Stir until well combined. Place small balls of the cookie dough on a parchment covered cookie sheet.Bake at 325 degrees until the edges just begin to brown.

I found some free printable St. Patrick Day trivia cards on Pinterest. Oh, how I love trivia. These little gems are getting placed on the table at dinnertime.

Buffalo Chicken Dip

My oldest daughter proclaimed her love for this particular dip not too long ago. So, after she’d had a busy and stressful week at school, I made it for dinner.

It is super easy and I know there are lots of recipes out there for this kind of dip. But here’s how I make it.

Loved in the South’s Buffalo Chicken Dip

3 10 oz. cans of chicken breasts

1 container of jalapeño cream cheese

1 block of regular cream cheese

16 oz. sour cream

8 oz. Red Hot Wing Sauce

8 oz. of habanero cheese

8 oz. cheddar cheese

Drain the chicken. Put softened cream cheeses and chicken in a large bowl. Add the wing sauce, sour cream, and the habanero cheese. Mix well. Put mixture in a greased glass pan. Put cheddar cheese on top. Bake at 325 degrees until bubbly.image

You can eat it on its own, with veggies, with chips, in a tortilla, any way you want it! image.jpeg

Keto Tiramisu {Low Carb}

My husband doesn’t have much of a sweet tooth, but every now and then he will ask me to make some kind of low carb dessert. The first dessert I ever made for him was a true tiramisu. We still both love the flavors of the Italian dessert, so when I saw the Kahlua flavored sugar free syrup, I made plans to make a low carb tiramisu-like treat. 007

Loved in the South’s Low Carb Tiramisu

1/2 stick of butter (softened)

4 to 5 packets of sweetener

1/4 cup of sugar free Kahlua flavored syrup

1 block of full fat cream cheese

1/4 cup of 100% cocoa chocolate chips

Put all of your ingredients into a blender and blend until smooth. Serve with a dollop of whipped cream.
